MY MEXICAN FAVORITE 
1 lb. ground beef
1/2 onion, chopped
1/2 green pepper, chopped (optional)
1 pkg. taco seasoning mix
1 c. cooked rice
1 can chili beans, mashed with potato masher
1 pkg. Azteca Soft Flour Tortillas (the small ones)
1 jar picante sauce or taco sauce (I use HOT)
Chopped black olives, sliced jalapenos, and chopped raw onion (all optional, but yummier with all of these)
1 lg. tomato, diced
3 c. Colby cheese, grated or shredded

Brown ground beef, onion, green pepper and add taco mix as directed. In a 9x9 inch microwavable or conventional pan, layer first a tortilla shell, rice, beef, beans, cheese and vegetables and a little sauce. Then another tortilla shell, rice, beef, beans, cheese, vegetables and sauce.

Keep layering until pan is full. Save some cheese and tomatoes or other vegetables to put on the top. Bake at 350 degrees until cheese melts. I cook mine in the microwave on HIGH for 15-20 minutes, or until cheese melts and everything is nice and hot. Serve with sour cream and chopped lettuce.

Since microwave ovens vary in power, you may need to adjust your cooking time.
