WILD RICE CASSEROLE 
1 c. cooked, deboned, diced chicken
1 (8 oz.) can sliced water chestnuts, drained
1 c. celery, chopped fine
1 1/4 c. onion, chopped fine
1 pkg. UNCLE BEN'S® fast cooking long & wild rice
1 c. mayonnaise
1 can cream of mushroom soup, undiluted

Cook the rice according to package directions. Mix together all ingredients except the soup. Pour into casserole dish and spread soup on top. Bake, covered at 325 degrees for 1 hour.

To Freeze: Cook rice. Mix all ingredients except the mayonnaise and the soup. Freeze.

When ready to serve, thaw and stir in the mayonnaise, spread the soup on top and bake.
