NO CHOLESTEROL CHOCOLATE CAKE 
1 c. egg whites (7 or 8)
1/4 tsp. salt
1 c. sugar
2 tsp. lemon zest (rind)
3/4 c. flour
1/2 c. cocoa
1/4 tsp. baking soda
1/4 tsp. cinnamon
2/3 c. light or pure olive oil (not extra virgin)

GLAZE:

3 tbsp. water
1 c. powdered sugar
1/4 c. cocoa
1 tbsp. olive oil

Whisk together egg whites and salt. Add sugar and zest. Stir in next four ingredients. Fold in olive oil. Bake 30 minutes at 350 degrees. Cover with glaze.
