ALMOND RICE 
1 1/2 lbs. pork sausage
3/4 c. diced celery
1 1/2 c. uncooked brown rice
5 green onions, chopped include tops
2 tbsp. green pepper, chopped
1 can (4 oz.) mushrooms, sliced
2/3 c. sliced almonds
1 1/2 pkg. dehydrated chicken soup mix or 3 c. water and 2 to 3 cubes chicken
bouillon or canned chicken broth equivalent

Brown meat, rice, celery, green onions, and green pepper. Pour off most of the grease. Make chicken soup according to directions on package, or chicken cube bouillon, or canned broth.

Add mushrooms, 1/2 cup almonds and boiling broth or soup mixture. Put in casserole, spread balance of almonds on top. Bake at 325 degrees for approximately one hour. When using quick brown rice, it takes about one hour, but with other rice, white, long grain, etc. It may take longer. Serves 8 to 10.
