ALMOND RICE 
1 c. long grain rice
2 c. chicken broth
3/4 tsp. salt
1/4 c. butter
2 tbsp. chopped scallions
1/4 c. chopped parsley
1/3 c. sliced almonds

Bring rice, broth and salt to a boil; reduce heat and cook 20 minutes. When the rice is cooked, add the remaining ingredients that have been sauteed in butter. Stir well and serve immediately. Serves 4 to 6.
