LEMON ALMOND RICE 
1/4 c. slivered almonds
1 c. rice
Salt and pepper to taste
2 tbsp. butter
1 lemon

Heat oven to 300 degrees. Toast almonds until golden, about 4 minutes. Peel lemon to get 1/2 teaspoon of chopped zest. Cook rice according to package directions. Add butter, lemon zest, and slivered almonds. Salt and pepper to taste.
