RICE WITH ALMONDS AND DATES | |
2 c. rice 1 c. blanched almonds 1 stick butter 1 c. dates, cut up 1/2 c. white raisins, optional 1/2 tsp. cinnamon or to taste Cook rice as package instructs for 2 cups. Meanwhile, melt butter in frying pan, add almonds and brown slightly, stirring constantly. Add raisins, dates and cinnamon. Place on low heat and let cook for another 10 minutes, stirring occasionally. When rice is fully cooked, add the mixture and serve. Serves 6-8. |
