SIRLOIN STEAKS WITH HORSERADISH
CREAM SAUCE
 
Serves 2.

1 (1/2 inch thick) sirloin steak or 2 sm. strip steaks
2 tbsp. vegetable oil
1 tbsp. butter
1/2 sm. onion, chopped
1/3 c. whipping cream
1 1/2 tsp. prepared horseradish
1 1/2 tsp. Dijon mustard
Freshly ground pepper

Melt butter and oil in a heavy skillet over high heat. Add steaks and sear on each side. Cook to desired doneness and remove from pan or transfer to oven to finish cooking.

Add onions to pan. Reduce heat to medium and cook until softened, stirring. Add cream, horseradish, mustard and pepper to taste. Spoon over steaks.

I made this tonight for my husband and I. There was something about reading the recipe that made me want to leave out the onions. Instead, I sprinkled chopped green onions on top. Tasty and pretty! Very good sauce! I will make this again.

I have made this on numerous occasions and it is great. I omit the mustard as I don't feel that it is necessary and the sauce with the horseradish and onion is a perfect way to enjoy a cheaper cut of steak. I have also added minced garlic and it is the best!
