KARLIE'S GREEK SALAD DRESSING | |
I'm on Weight Watchers and this recipe is 2 points plus value for 1 ounce. I was having trouble finding a good low-fat Greek dressing so I created this. Also, 1 ounce goes a long way with flavor on a salad. 3 1/2 oz. olive oil 2 1/2 oz. red wine vinegar 1 to 2 oz. lemon juice, approx. juice from 1/2 fresh lemon 1 to 2 cloves garlic, pressed or finely chopped 1/2 tsp. dried oregano (or 1 tsp. fresh, chopped) 1/4 tsp. dried dill (or 1/2 tsp. fresh, chopped) 1/4 to 1/2 tsp. ground Sumac (optional) fresh cracked black pepper, to taste salt, to taste Note: Sumac can be found at your local Lebanese bakery/store. It will give the dressing that reddish color found at Greek restaurants and great flavor, but is optional. Place all ingredients in a shakeable container and shake. Can be enjoyed right away or stored in the refrigerator for up to 5 days. Just shake again before pouring over salad. Would work well over Fatoosh (a dish consisting of chopped tomato, cucumber, onion, bell pepper (I prefer red/yellow), feta cheese, and pita chips. Submitted by: Karlie |
