MICROWAVE STRAWBERRY JAM 
4 c. strawberries, crushed
1 tbsp. lemon juice
1/4 c. powdered pectin
3 c. sugar
1/2 tsp. ground coriander (optional)

Combine strawberries, lemon juice and pectin in a 3 quart microwave-safe bowl. Cover with plastic wrap or waxed paper and bring to a boil in the microwave oven on high setting (about 7 minutes). Remove from oven and stir.

Cover and cook 3 minutes more. Add remaining ingredients. Return uncovered mixture to oven and cook until jam sheets from spoon (about 1 minute). Skim foam; pour into hot jars, leaving 1/4 inch head space. Adjust caps. Process 10 minutes in boiling water bath. DO NOT ATTEMPT TO PROCESS IN MICROWAVE. Yield about 4 (8 ounce) jars.

Since microwave ovens vary in power, you may need to adjust your cooking time.
