MASHED CAULIFLOWER 
1 medium size cauliflower
2 tbsp. butter
1/4 c. low-fat milk
pinch of salt (or less if you have to watch your salt)

Rinse and chop the cauliflower into about 1-inch pieces. Steam for 10 to 12 minutes. Put in blender with the same ingredients you would use with mashed potatoes. Blend until consistency is like mashed potatoes.

Serves 6 to 8.

Count as vegetable - no carbohydrates.

Note: This is a great substitute dish for diabetics and dieters watching their carbohydrates. Looks and tastes just like mashed potatoes.
