HOLIDAY YAMS 
1/2 c. sugar
1/2 c. brown sugar, packed
2 tbsp. cornstarch
1/2 c. orange juice
1/4 c. melted butter
Salt to taste
4-5 med. yams, peeled & sliced

Cook sweet potatoes until tender. Combine sugar and cornstarch; blend well. Stir in orange juice, butter and salt. Simmer over low heat, stirring until slightly thickened. Add sweet potatoes and simmer until sweet potatoes are hot through (or) place sweet potatoes (uncooked) in 2 quart casserole and add orange sauce and bake at 350 degrees for 30 minutes.
