ROAST PORK WITH PINEAPPLE RAISIN
SAUCE
 
1 (3 lb.) Boston butt
1 tsp. salt
1/2 tsp. black pepper
1/2 sm. onion

SAUCE:

1 sm. can crushed pineapple
1/2 c. raisins
1/2 c. brown sugar
1/2 c. water
1 tbsp. corn starch

Place roast in baking pan. Sprinkle with salt, pepper, and onion. Cover with foil and bake in 325 degree oven for 2 1/2 hours or until tender. Let stand until cool. Skim grease; slice.

Sauce: Mix pineapple and brown sugar in small saucepan over medium heat until sugar dissolves. Add raisins and bring to boil. Mix water and cornstarch. Add to sauce slowly, stirring constantly. Boil until thick. Serve over pork.
