SWEET POTATO CASSEROLE 
1 c. sour cream
1/2 c. soft butter
1/2 c. sugar
1/2 c. brown sugar
3 eggs, beaten
1 1/2 tsp. vanilla
4 to 5 lbs. cooked, peeled, mashed sweet potatoes

Mix ingredients together and spread in 9 x 13 inch casserole dish. Sprinkle topping over sweet potato mix. Bake 25 to 30 minutes at 350 degrees (until brown on top).

TOPPING:

1 c. coconut tossed in 1/4 c. flour
1 c. brown sugar
1/3 c. butter
1 c. chopped nuts

Mix together and spread on top.
