ONION CASSEROLE 
5 c. chopped sweet yellow onions (Vidalia good in season)
1/4 c. melted butter
1 c. cooked long grain rice
8 oz. sour cream
1 c. shredded Cheddar cheese

Saute onion in butter until tender. Remove from heat. Stir in rice and sour cream. Spread half onion mixture in greased 12 x 8 x 2 inch baking dish. Sprinkle with 1/2 cup cheese. Repeat layers. Cover and bake at 350 degrees for 30 minutes, then uncover and bake an additional 15 minutes or until lightly browned. Makes 6-8 servings.
