POTATO CASSEROLE 
6 med. potatoes, cooked, cooled & peeled
1/4 c. butter
1/3 c. chopped green onion
2 c. shredded Cheddar cheese
1 1/2 tsp. salt
1/4 tsp. pepper
2 c. sour cream (1 c. sweet cream & 1 c. sour cream)

Grate peeled potatoes into a mixing bowl. Mix with other ingredients and bake 45 minutes at 350 degrees, covered. Can make 1 or 2 days ahead and refrigerate.
