ZUCCHINI CASSEROLE | |
2 lb. unpeeled zucchini or yellow squash (or mixed), washed & grated 1 med. chopped onion 1 sweet red pepper 4 med. carrots, peeled & grated fine 1 c. sour cream 1 can cream of chicken soup 1 (14 oz.) pkg. Pepperidge Farm cube stuffing herb seasoned 1/4 c. butter, melted Place zucchini in large mixing bowl with onion, pepper, carrots, sour cream and undiluted chicken soup and mix well. Line bottom of greased 13"x9" baking pan with half stuffing mix and pour squash mixture over stuffing. Mix remaining stuffing with melted butter and sprinkle over top. Bake about 35 minutes at 350 degrees. Makes 6 to 8 servings. |
