VEGETABLE PESTO PIZZA 
2 tbsp. pesto sauce
1 c. shredded Mozzarella cheese
12 thin slices yellow squash
12 thin slices plum tomatoes
1 c. very sm., slightly under cooked broccoli flowerets
1/2 c. sliced scallions

Heat oven to 500 degrees. Spread pizza dough out on pizza pan. Sprinkle with pesto sauce and 1/2 cup Mozzarella cheese. Top with squash, tomatoes, broccoli, scallions and 1/2 cup Mozzarella cheese. Bake 10 to 12 minutes until edges of crust is browned and crisp. Serves 2.
