OATMEAL COOKIES | |
2 c. butter = 2 sticks 1 1/3 c. sugar 1 1/2 c. brown sugar 1 tsp. vanilla 1 1/2 c. flour 1 tsp. baking soda 3 1/2 c. oats (oatmeal) 2 eggs 1/4 tsp. salt 1 tsp. cinnamon 1 pinch ginger 1 pinch cloves OTHER VARIATIONS IF DESIRED: 1/2 c. pecans 1/2 c. chocolate chips 1. Preheat the oven at 350 degrees. 2. Cream butter. 3. Stir in the white and brown sugar until smooth. 4. Add in the eggs and vanilla. 5. In another bowl combine the flour, soda, salt and spices. Mix well. 6. Fold dry ingredients into the butter/sugar mixture. 7. Add in oats and desired variation - mix well. May need to add 1/4 cup of water. 8. Drop by teaspoonfuls on ungreased cookie sheet. 9. Bake for 7 to 10 minutes at 350 degrees. 10. Note: When slightly browned they are chewy and when browner they are crisper. Makes approximately 4 dozen cookies. Enjoy them! |
