MOLASSES COOKIES 
1 c. shortening
1 3/4 c. white sugar
1 egg
1/2 c. molasses
2 c. oatmeal
1 1/2 c. coconut
1 tsp. salt
2 c. flour
1 1/2 tsp. baking soda
1/2 tsp. ginger and cinnamon

Cream shortening, sugar, egg, molasses, then flour, soda and salt. Stir in oatmeal and coconut well, also spices. Divide into 3 rolls; wrap in wax paper or foil; chill until solid. Slice. Bake at 350 degrees until edges are light brown. Unbaked cookies keep well in refrigerator for quite a while.
