BANANA CHOCOLATE CHIP MUFFINS | |
1 c. all-purpose flour 1 c. whole wheat flour 1/2 c. sugar 1/2 tsp. baking soda 1/2 c. water 3 tbsp. vegetable oil 1 egg 1 tsp. vanilla 2 med. bananas (1 c. mashed) 2 tbsp. nuts, chopped 1/4 c. miniature chocolate chips Heat the oven to 350 degrees. Grease bottoms of 12 muffin cups. In a large bowl, combine the flours, sugar, baking powder and baking soda. In a 1-cup glass cup, measure the water; add oil, egg and vanilla, mixing with fork. Add water mixture and bananas to the flour mixture, stirring just until moistened. Stir in nuts and chocolate chips. Spoon into muffin cups, about 3/4 full. Bake 20 to 25 minutes, until a toothpick inserted in the center comes clean. Yield: 12 muffins. Low-fat muffins: 181 calories, 6.4 g. fat, 21 mg. cholesterol. Regular muffins: 314 calories, 15.9 g. fat, 42.1 mg. cholesterol. |
