PASTA WITH FRESH TOMATOES | |
3 med. ripe tomatoes 3 tbsp. olive oil 2 tbsp. fresh basil 1 tbsp. lemon juice 1 tsp. sugar 1/2 tsp. salt 1/8 tsp. crushed red pepper 1 lb. uncooked pasta 1/4 c. grated Parmesan cheese Combine all ingredients except pasta and cheese and place in a covered container in refrigerator 2 hours or no longer than 24 hours. Prepare pasta as directed on package; drain. Immediately toss with tomato mixture. Serve immediately. Sprinkle with cheese. Serves 6. |
