RICOTTA COOKIES 
1/2 lb. butter, room temperature
2 c. sugar
2 eggs, room temperature
2 tsp. vanilla
4 c. flour
1 lb. ricotta cheese, room temperature
1 tsp. baking powder
1 tsp. baking soda

Use a hand mixer. Cream butter and sugar together. Add eggs one at a time and beat until creamy. Add cheese and vanilla; beat 1 minute. Mix flour, soda, and powder and add to mixture; mix well. Drop teaspoonful on ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes.

ICING:

2 c. powdered sugar
4 tbsp. milk

Mix until creamy; spread while cookies are warm; put on colored sprinkles while warm.
