RICOTTA DROP COOKIES 
1/2 lb. butter
2 c. sugar
3 eggs
2 tsp. vanilla
1 lb. Ricotta
4 c. flour
1 tsp. baking soda
1/2 tsp. salt

Cream butter, add sugar, stir in eggs, vanilla and ricotta. Beat for 15 minutes. Mix in dry ingredients. Mix well, will be thick (mix by hand if necessary). Drop by teaspoons on lightly greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Ice with powdered (10x) sugar and milk icing (you can add a few drops of almond extract for flavoring). it may be colored or sprinkle with sugar or jimmies.
