RICOTTA COOKIES 
BASE:

5 c. flour
1 1/2 sticks butter
2 1/2 tsp. lemon peel
1 1/2 c. sugar
2 tsp. baking powder
1 egg

Mix base ingredients together. Save 1/2 of the base for topping.

FILLING:

2 lb. Ricotta cheese
2 c. sugar
Candied fruit (as much as desired)

Grease sided cookie pan. Place 1/2 of the base in pan and press. Then put Ricotta filling over the base. On top of the filling crumble the rest of the base.

Bake at 350 degrees for 30 to 40 minutes.
