RICOTTA COOKIES 
1 c. butter, softened
2 c. sugar
3 eggs
2 c. ricotta cheese
2 tsp. vanilla
4 c. flour
1 tsp. baking soda
1 tsp. salt

Preheat oven to 350 degrees. Grease cookie sheets. Cream together butter, sugar, eggs, and cheese until smooth. Stir in vanilla. Combine flour, baking soda, and salt. Beat into butter mixture. Drop dough by 1/2 teaspoonfuls onto cookie sheets. Bake about 15 minutes. Cool on racks.

ICING:

1 (1 lb.) box powdered sugar
4 tbsp. butter, softened
2 tsp. vanilla
Milk

Combine ingredients and add enough milk to make it soft and smooth. Frost cookies and sprinkle with coconut or chopped nuts.
