RICOTTA COOKIES 
2 sticks butter
2 c. sugar
2 eggs
2 tsp. vanilla or anisette
4 c. flour (wheat maybe used)
1 tsp. baking powder
1 tsp. baking soda
2 c. Ricotta cheese (whole or skim)

Cream butter and sugar. Add eggs, vanilla, cheese - then add dry ingredients. Mix until smooth consistency. Drop by spoonfuls on greased baking sheets. Bake 12-15 minutes or until golden brown.

ICING:

1 1/4 c. 10x sugar
4 tbsp. milk

Food coloring or jimmies on top of cookie.
