SWEET POTATO SOUFFLE 
3 c. cooked, mashed sweet potatoes
1 c. sugar
1/3 stick butter
1/2 tsp. salt
2 eggs
1/2 c. milk
1 tsp. vanilla

Mix the above ingredients together and pour into a lightly greased baking dish (9 x 13 inch). Cover with the following topping:

TOPPING:

1 c. brown sugar
1 c. chopped nuts
1/3 c. flour
1/3 stick melted butter

Mix thoroughly and sprinkle over souffle. Bake at 350 degrees for 30 to 40 minutes.
