SWEET POTATO SOUFFLE 
3 c. cooked mashed sweet potatoes
1 c. sugar
2 eggs
1 tsp. vanilla
1/2 c. milk
1/2 c. butter, melted

Combine all ingredients and pour in greased casserole.

Combine the following ingredients and place on top of first mixture: 1/3 c. flour 1 c. pecans 1/2 c. butter, melted

Bake at 350 degrees 30-45 minutes.

(Canned sweet potatoes that have been drained may be used.)

This is a good dish for your Christmas menu and not difficult.
