SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
1 c. sugar
2 c. eggs
1/2 c. milk
1/2 tsp. salt
1 tsp. vanilla
Dash of cinnamon
1 stick butter

TOPPING:

1 c. chopped pecans
1/3 c. self-rising flour
1/2 c. sugar
Dash of salt
Dash of cinnamon
1/2 stick melted butter

Mix well the sweet potatoes, sugar, eggs, milk, salt, vanilla and cinnamon. Top with chips of the butter. Make the topping by mixing all the ingredients except the butter. Spread the topping over the potato mixture and pour melted butter over the top. Bake for 45 minutes in a 350 degree oven.
