CRAB QUICHE 
2 eggs, beaten
1/2 c. milk
1/2 c. mayonnaise
1 tbsp. flour
8 oz. crab (or more)
8 oz. Swiss cheese, grated
1/2 c. scallions
Salt & pepper
2 pie crusts

Mix together crabmeat, cheese, and scallions, salt and pepper. Pour into pie crust. Mix eggs, milk, mayonnaise and flour. Pour over crab. Bake at 350 degrees for 35 to 40 minutes, until set. Yields 12 servings.
