CHICKEN WAIKIKI 
1 chicken, cut up
Floured with seasoning

Fry in small amount of oil until brown. Place in shallow pan, skin side up. Sprinkle with salt and pepper.

SAUCE:

1 can sliced pineapple
1 c. sugar
2 tbsp. cornstarch
3/4 c. cider vinegar
1 tbsp. soy sauce
1/4 tsp. ginger
1 chicken bouillon cube
1 green bell pepper, sliced into rings
1 can sweet potatoes (optional)

Drain pineapple. Add water to make 1 1/2 cups. Combine sugar, cornstarch, vinegar, soy sauce, ginger and bouillon cube. Bring to a boil, stirring constantly. Boil 2 minutes and pour over chicken.

Bake uncovered at 350 degrees for 30 minutes. Place sweet potatoes, pepper and pineapple rings around chicken. Bake 30 minutes longer. Serve with rice.
