CHICKEN WAKIKI 
1 chicken, cut up
1 can crushed pineapple
1 c. sugar
2 tbsp. cornstarch
Sm. jar chopped red pimentos
3/4 c. vinegar
1 tbsp. soy sauce
1/4 tsp. ginger
1 chicken bouillon cube
1 lg. green pepper, cut in rings

Preheat oven to 350 degrees. Brown chicken well on both sides. Drain pineapple and add water to juice to make 1 1/4 cups. Combine sugar, cornstarch, pineapple juice, vinegar, soy sauce, ginger and bouillon cube. Boil 2 minutes. Add pineapple and pimentos. Place chicken in casserole dish, skin side up. Pour sauce over chicken. Bake, uncovered, 30 minutes. Place green pepper rings on top of chicken and bake 30 minutes longer.
