ITALIAN MEAT LOAF 
2 lbs. ground meat
1 egg
3/4 c. cracker crumbs
1/2 c. chopped onion
1 tsp. salt and pepper
2 (8 oz.) spaghetti sauce
2 c. Mozzarella cheese, shredded

Combine first 5 ingredients and 1/2 cup spaghetti sauce. Mix well! Shape into 10 x 12 inch rectangle on wax paper. Sprinkle cheese evenly over meat. Roll like a jelly roll. Be sure to seal ends. Bake 1 hour at 350 degrees. Top with remaining spaghetti sauce and (cheese optional).
