CHEESY NEW POTATOES | |
12 med. red potatoes, unpeeled and cut into cubes 1/2 c. butter, melted 1/4 tsp. pepper 1 c. cooked bacon pieces 8 oz. Velveeta cheese Cover pot with salted water, bring potatoes to boil, reduce heat and cook until tender (15 minutes). Drain, cool slightly and stir in butter and pepper. Spoon 1/2 of potato mixture into lightly greased casserole. Top with 1/2 each of bacon and cheese. Repeat layers. Bake at 350 degrees for 20 minutes. Garnish with parsley if desired. |
