DIABETIC PUMPKIN COOKIES 
1/2 c. shortening
3 tsp. sweetener
1 c. pumpkin
1 egg
1 c. raisins
2 c. flour
1 c. nuts, chopped fine
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. ginger
1/2 tsp. nutmeg

May use 2 teaspoons pumpkin pie spice instead.

Cream shortening and sweetener. Add egg and pumpkin alternately with dry ingredients. Mix well and drop onto cookie sheet. Bake at 400 degrees for 15 minutes. 3 dozen cookies.
