CUBAN CHICKEN 
Chicken thighs, remove skin
Potatoes, peeled & quartered
Onion, lg. & diced
2 cloves garlic, diced
2 bay leaves
1/8 tsp. oregano, crushed
1/8 tsp. thyme, crushed
Corn on the cob, 1 per person
Shortening, enough to cover bottom of pot
1 c. water, add more if needed

Fry skin in shortening, discard skin. Brown chicken. Add onion, garlic, and spices for 1 minute. Now add other ingredients, leaving corn until chicken and potatoes are almost done. May add olives if you want. Pork can be used instead of chicken.
