CUBAN CRAWFISH "CHILAU" 
12 crawfish (cut tails 3 or 4 times, leave in shell)
1 lb. white bacon, fried out
1 lg. onion, chopped
1 lg. green pepper, chopped
1 tbsp. oregano
1 whole foot of garlic
2 cans tomato sauce
2 tbsp. ground cumin
Salt and pepper

Fry bacon, then saute onion, garlic, and pepper in drippings. Add everything and simmer for 1 hour.
