BERNA'S ZUCCHINI BREAD 
1 egg, plus 1 egg white
1 1/4 c. sugar
1 c. cooking oil
2 c. shredded zucchini, uncooked (one medium)
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. mace
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
Dash salt
1/2 tsp. baking powder
1/2 c. chopped walnuts

Beat eggs until light. Gradually add sugar, beating well. Beat in oil. Add zucchini, spices and vanilla, mixing well. Combine flour, soda, salt and baking powder; add to first mixture one cup at a time and mix well. Fold in nuts. Pour into greased and floured pans (makes one large loaf pan or 2 medium loaf pans). Bake in 350 degree oven for 35-40 minutes or until toothpick inserted in center comes out clean. Cool before serving. Keep refrigerated. Great toasted!
