1 1/2 c. water 2 chicken bouillon cubes 2 tbsp. snipped parsley 1 tbsp. grated onion 2 c. Half and Half 1 1/3 c. packaged instant mashed potatoes 1 (4 oz.) pkg. whipped cream cheese Snipped chives Combine water, bouillon cubes, parsley and onion in saucepan. Bring to boiling over medium flame, stirring until bouillon cubes are dissolved. Turn off flame. Add Half and Half, then stir in potatoes. Cool. Blend in cream cheese, stirring until mixture is smooth. Chill well. Serve in chilled bowls, garnished with snipped chives. Yield: 4 to 6 servings. |
