SHOEPEG CORN CASSEROLE 
1 sm. onion, chopped
1 can cream of mushroom soup
1 can shoepeg corn, drained
1 can French style green beans, drained
1/2 c. sour cream
1/2 c. shredded Cheddar cheese
Dash of salt
1 pkg. Ritz crackers (1 tube)
1 stick butter, melted

Combine first 7 ingredients and put in casserole. Spread crushed Ritz crackers on top and drizzle melted butter over crackers. Bake at 375 degrees for 30 minutes uncovered.
