SHOEPEG CORN CASSEROLE 
1/2 c. chopped onion
1/4 c. bell pepper, chopped
1 can shoepeg corn
1/2 pt. sour cream
1 stick butter
1/2 c. chopped celery
1/2 c. grated sharp cheese
1 can French style beans, drained
1 can cream of celery soup
1 stack Ritz crackers

Combine all ingredients except crackers and butter. Pour in greased casserole dish. Crush crackers, melt butter and mix with crackers. Spread on vegetable mixture and bake at 325 degrees for 45 minutes.
