SPICED RICE 
1 c. uncooked rice
1 pkg. frozen chopped spinach (drain)
3/4 c. butter
1/2 lb. mushrooms, sliced
1/3 c. sour cream
1 sm. can green chili peppers, minced
1 carton (or 8 oz. pkg.) jalapeno cheese, melted

Cook rice and spinach according to package directions. Put into 1 1/2 quart round casserole. In 1/4 cup butter, saute mushrooms and add to rice and spinach.

Melt remaining butter with cheese and sour cream; add to casserole along with minced green chili peppers. Bake covered at 350 degrees for about 20 to 30 minutes. Serves 6.
