SPICED RICE WITH PEAS & CASHEWS 
1 c. cashews
1 tbsp. peanut oil
1/4 c. raisins
1 1/2 c. long grain rice
2 tsp. curry powder
3 c. boiling water
1 tsp. salt
1 (10 oz.) pkg. frozen peas
2 tbsp. lime juice

Saute cashews in oil over medium-low heat until golden brown, about 4 minutes. Remove to paper towel to drain. Saute raisins about 30 seconds and remove from heat. Heat oven to 350 degrees. Saute rice and curry powder, about 4 minute. Add 3 cups boiling water. Bake on center oven rack 45 to 50 minutes. Remove from oven. Stir in peas; let stand covered 6 minutes. Chop cashews. Stir lime juice into rice. Sprinkle with cashews and raisins.
