SPICE UP CHICKEN `N RICE 
1 tbsp. salt
2 tsp. paprika
1/4 tsp. each garlic powder & pepper
2 1/2-3 lb. choice chicken pieces
2 tbsp. vegetable oil
3/4 c. each chopped onions & green pepper
1 1/2 c. uncooked rice
2 1/2 c. chicken broth
1 1/2 tsp. cumin seed

Blend salt, paprika, garlic powder and pepper. Sprinkle 1 tablespoon of the seasoning on chicken pieces. Brown chicken on all sides in oil, using an oven-proof skillet. Add onions, green pepper and rice. Stir in broth, cumin seed and remaining seasoning. Return chicken to skillet. Bring to a boil, cover and bake at 350 degrees for 30-35 minutes or until chicken is tender and liquid is absorbed. Garnish with chopped parsley, if desired. Makes 6 servings.
