GRATIN OF ASPARAGUS | |
16-24 asparagus spears 2 lg. eggs 2 egg yolks 1 1/2 c. whipping cream Salt & freshly ground pepper 4-6 slices baked ham 2 tbsp. grated Swiss cheese 2 tbsp. freshly grated Parmesan cheese Prepare asparagus (blanch). Whip eggs, cream, salt and pepper. Roll asparagus in ham and place seam down in oblong baking dish. Pour egg mixture over ham and asparagus rolls. Sprinkle with Swiss and Parmesan cheeses. Bake at 350 degrees for 40 minutes. Makes for an elegant brunch dish. |
