BRUSCHETTA - SERVED COLD WITH FETA | |
Very refreshing for a summer appetizer. Normally served warm, this is a great alternative in the heat! 2 plum tomatoes, seeded and diced 1/2 cup red onion, diced 2 medium or 3 small garlic cloves, crushed 2 tsp. basil, dried 2 tbsp. olive oil 1 cup Feta cheese, crumbled 1 Baguette Combine all ingredients together, except the Feta cheese and bread, in an air tight container. Let flavours meld overnight in the refrigerator for a couple of hours. Slice and toast/broil the baguette on a baking sheet in the oven until golden brown, flip the slices over and brown the other side. Allow slices to cool on a rack. Serve with bread in a basket, the Feta cheese in a bowl and the tomato mixture in another bowl. Allow family/guests to build their own appetizer. Enjoy! Submitted by: Muskoka Chef |
