DIABETIC CAKE 
2 1/2 c. water
2 1/2 c. raisins
2 c. unsweetened applesauce
3 eggs
2 tbsp. Sweet & Low
1 1/2 c. cooking oil
3 c. self-rising flour
3 tsp. cinnamon
1/4 tsp. baking soda
2 tsp. vanilla

Cook raisins in water until all water is boiled out. Add applesauce, sweetener, oil and eggs, mix well. Blend in flour, soda, cinnamon and vanilla. Pour the mixture into a greased and floured bundt pan. Bake at 350 degrees for 40 to 45 minutes or until cake is done.
