DIABETIC CAKE RECIPE 
2 1/2 c. water
2 1/2 c. raisins
2 c. unsweetened applesauce
3 eggs
2 tbsp. Sweet 'n Low
1 1/4 c. oil
3 c. self-rising flour
3 tsp. cinnamon
2 tbsp. vanilla
1/2 tsp. baking soda

Cook raisins in water until the water is boiled out. Add applesauce, Sweet 'n Low, oil and eggs; mix well. Blend in flour, cinnamon, soda, and vanilla. Pour into greased and floured bundt pan. Bake at 350 degrees for 30 to 35 minutes.
