LEMON POTATO WEDGES 
3 med. baking potatoes, do not peel
3 tbsp. butter
2 tbsp. fresh lemon juice
2 tbsp. fresh grated lemon peel
1/2 tsp. paprika
3 tbsp. grated Parmesan cheese

Cut potatoes in wedges by cutting in quarters lengthwise. Set aside.

In 1 cup measure, microwave butter 1 minute on High, or until melted. Add lemon juice. Place potatoes in shallow baking dish, brush edges with butter mixture.

Combine lemon peel, paprika and cheese in small cup. Sprinkle over potatoes. Microwave uncovered, 10 to 12 minutes on High or until potatoes are tender. Let stand loosely covered with waxed paper, for 4 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
